Break the fast!

How many times have you heard people say that breakfast should be the most important meal of the day, or have "breakfast like a king, lunch like a prince and dine like a pauper". Well they might well be right!

English breakfast and its eggs, sausages, bacon, beans is not really what we could call the most healthy way to start the day (however who needs to start the day on a sunday...).

Having been practising Yoga more intensely recently,my body has been asking for regular and healthy fuel, and it's made me become much more aware of what my body was really asking for. I had forgotten how important breakfast was, and it's giving me energy to start the day well,  be efficient at work and helps regulate the energy level and food intake throughout the day (yes it is common sense, but always good to remind people!).

When i was a chelet chef in Verbier, people used to love my Homemade muesli and many of them asked me the recipe. This is really really easy to prepare, and you can prepare a large amount and keep it in airtight containers. It's delicious with yogurt and honey, or with milk or soy milk. I give you the recipe further down.

To make it a nutritional and tasty food, it's good to put loads of grains, nuts, dried fruits. Amongst those, i have discovered the Goji berries.

Goji berrie is a fruit that grows in different parts of Asia: Himalayas, Thailand, Tibet. It's a fruit that is full of vitamin C, contains more beta caroten than carrots, 19 amino acids (more than pollen), proteins, dietary fibers and carbohydrates. it's a "superfood"! Perfect to integrate in breakfast!

I also use dried cranberries, reknown for being a good source of antioxidant and may help maintain healthy blood circulation and known to help prevent cystitis.

Hazelnuts are a good source of magnesium, contain a high level of mono insaturated fats that helps lower the "bad" cholesterol (LDL), without reducing "good" choloesterol (HDL). It contains antioxydants like tanins, Vitamin E and flavanoids.

But enough with nutrition, here is the recipe for the muesli that's good for you but equaly importantly very tasty!

Homemade Muesli

250g oats

50g pumpkin seeds

50g sunflower seeds

50g dried cranberries

50g Goji berries

100g Dates

50g hazelnuts ( slightly crushed)

50g Almonds (slightly crushed)

40g butter

2 tablespoons honey

Preheat your oven 180°

Melt the butter with the honey.

In a bowl, put the oats and mix in the honey and butter mix

put it all in a baking tray lined with baking parchment and put in the oven for about 15min,

or until it's toasted.

Add all the grains, nuts and fruits and toast another 5-10min in the oven.

Let it cool down before you put in airtight containers.
